Simple and Delicious Kale & Cherry Salad

An easy summer salad is always a good idea!!. After all, cooking should be fun and sometimes restricted to whatever we have available in our pantry. Feel free to substitute and add your own ingredients 🙂. Go ahead and try this one …

INGREDIENTS
2 Cups Kale, roughly torn
1 ounce can of black beans, drained
1 ½ Cup fresh and pitted Cherries
½ Cup grilled sweetcorn kernels
½ Cup Pomegranate kernels
Pink himalayan Salt to taste
Freshly ground Pepper to taste
1 Cup Microgreens
1 Cup Coconut Flakes

DRESSING
⅓ Cup Toasted Sunflower seeds
¼ Cup Olive oil
2 tablespoons fresh lemon juice
¼ cup roughly chopped basil leaves
Salt + Pepper to taste
Red Chilli flakes to taste

METHOD

STEP 1: Put the roughly torn Kale in a big salad bowl and add 2 spoon olive oil to it. Sprinkle some salt and coat all leaves. Roughly massage and rub the leaves till they soften a little bit

STEP 2: Add the grilled sweetcorn, black beans, cherries, microgreens, coconut flakes, salt and pepper

STEP 3: Add all the dressing ingredients in a blender and blend for one minute

STEP 4: Add the dressing to Salad and garnish with pomegranate kernels
