Chia Seed Pudding with Nice Cream

As the official British Summer is still not over, I thought a chilled breakfast or dessert recipe would be a nice addition to the blog 🙂 . It’s low calorie and contains no added refined sugar. I made this pudding over the lockdown time and it has been such a respite during the hot summer days. Plus its easy and health benefits are many.

Chia seeds are full of Omega 3 fatty acids, Antioxidants, Fiber, Magnesium and Potassium. All in all super healthy food in a jar, that too in the form of pudding. So let’s dive into the recipe straight away.

Ingredients for Chia Seeds Pudding

3-4 Tablespoons Chia Seeds

1 Cup Milk (I prefer to use plant based milk like Soy, Almond, Coconut or Oat Milk)

¼ Tablespoon Vanilla Essence

½ Tablespoon Honey or Agave Nectar

Ingredients for Green Nice Cream

1 Frozen Banana

¼ Tablespoon Spirulina Powder

½ Cup Almond Milk

Mint Leaves for Garnishing

Blueberries for Topping


Ingredients for Pink Nice Cream

1 Frozen Banana

½ Cup Frozen Strawberries

½ Cup Almond Milk

Grated Coconut for Garnishing





METHOD

STEP 1: Mix the Chia Seeds, Milk , Vanilla Essence and Agave Nectar in a Mason Jar or a glass. Try and stir it with a fork so that no clumps are formed. Let it sit for 3-5 minutes. Then again stir it . Let it set in the refrigerator for 2-3 hours or preferably overnight. I normally use 4 tbsp Chia Seeds for a thicker pudding like consistency.  

STEP 2: Next morning take the Chia Pudding out of the refrigerator and equally divide it in two mason jars or glasses.

STEP 3: Place frozen banana slices, spirulina powder and almond milk in a high speed food processor or blender. 

STEP 4: Blend on high for 1-2 minute and keep scraping the sides in between. Once done it should be like super thick soft serve ice cream. 

STEP 5: Layer it over the first Chia pudding mason jar. Top it up with blueberries.

STEP 6: In the similar manner, blend the frozen banana, frozen strawberries and almond milk. Keep on scraping sides.


STEP 7: Layer it over the second mason jar. Sprinkle some coconut flakes.

    Can we use anything else in place of spirulina powder?

      Hi Purnima,
      Apart from its numerous health benefits, we added Spirulina for its rich green colour. Few alternatives to it would be Matcha powder, Wheatgras, Moringa powder or any super green powder available in natural health shops. There is also an option of green superfood mixed with chocolate.
